Ingredients

Crust
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter cold and cubed
  • 1/4 cup ice water more if needed
  • 1/4 teaspoon salt
Filling
  • 2 cups butternut squash peeled and diced
  • 1 large onion sliced
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup goat cheese crumbled
  • 1 teaspoon thyme fresh or dried
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Method

Prepare the Crust
  1. In a mixing bowl, combine flour and salt. Add cold butter and mix until crumbly. Stir in ice water until dough forms.
  2. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
Roast the Squash
  1. Preheat the oven to 400°F (200°C). Toss diced butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25 minutes until tender.
Caramelize the Onions
  1. In a skillet over medium heat, add sliced onions and a bit of olive oil. Cook, stirring occasionally, for about 15 minutes until golden brown.
Assemble the Quiche
  1. Roll out the chilled dough and fit it into a pie dish. Pre-bake the crust for 10 minutes.
  2. In a bowl, whisk together eggs, cream, thyme, salt, and pepper. Stir in roasted squash, caramelized onions, and goat cheese.
  3. Pour the filling into the pre-baked crust and bake at 375°F (190°C) for 30 minutes until set.
Serve
  1. Let the quiche cool for a few minutes before slicing. Serve warm or at room temperature.
