Ingredients

Choux Pastry
  • 1 cup water for boiling
  • 1/2 cup unsalted butter cut into pieces
  • 1 cup all-purpose flour sifted
  • 1 teaspoon salt
  • 4 large eggs beaten
Lemon Cream Filling
  • 1 cup heavy cream chilled
  • 1/4 cup powdered sugar
  • 1/4 cup lemon juice freshly squeezed
  • 1 tablespoon lemon zest
Raspberry Topping
  • 1 cup fresh raspberries for topping
  • 2 tablespoons sugar to sprinkle on raspberries

Method

Prepare Choux Pastry
  1. Preheat the oven to 400°F (200°C). In a saucepan, combine water and butter over medium heat until the butter melts.
  2. Add flour and salt all at once, stirring vigorously until the mixture forms a ball and pulls away from the sides of the pan.
  3. Remove from heat and let cool for 5 minutes. Gradually add beaten eggs, mixing until smooth and glossy.
  4. Transfer the dough to a piping bag and pipe 4-inch long strips onto a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes until golden brown and puffed. Let cool completely.
Make Lemon Cream Filling
  1. In a mixing bowl, whip the heavy cream and powdered sugar until soft peaks form.
  2. Gently fold in lemon juice and lemon zest until well combined.
Assemble Eclairs
  1. Once the eclairs are cool, cut a small slit in the side of each eclair.
  2. Fill each eclair with the lemon cream using a piping bag.
  3. Top with fresh raspberries and sprinkle with sugar.
