Ingredients

Salmon
  • 4 fillets salmon fillets skinless, boneless
Stuffing
  • 2 cups fresh spinach chopped
  • 1 cup feta cheese crumbled
  • 1 clove garlic minced
  • 2 tablespoons olive oil for sautéing
  • 1 teaspoon lemon juice freshly squeezed
  • 1 teaspoon black pepper to taste
  • 1 teaspoon salt to taste

Method

Prepare the Filling
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute.
  2. Add chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat.
  3. In a mixing bowl, combine the cooked spinach, feta cheese, lemon juice, salt, and pepper.
Prepare the Salmon
  1. Lay the salmon fillets skin-side down on a sheet of plastic wrap.
  2. Spread the spinach and feta mixture evenly over each fillet.
  3. Starting from one end, carefully roll the salmon fillet into a pinwheel shape, using the plastic wrap to help.
  4. Wrap the pinwheels tightly in the plastic wrap and refrigerate for 15 minutes to firm up.
Cook the Pinwheels
  1. Preheat the oven to 375°F (190°C).
  2. Remove the plastic wrap from the salmon pinwheels and place them in a baking dish.
  3. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  4. Remove from the oven and let rest for a few minutes before slicing into rounds.
