Ingredients

Cake
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
Filling
  • 1 jar morello cherries drained and pitted
  • 1/4 cup cherry juice
  • 1 cup heavy whipping cream whipped
  • 2 tbsp powdered sugar for sweetening cream
  • 1 tsp vanilla extract
Decoration
  • 1 cup heavy whipping cream for frosting
  • 2 tbsp powdered sugar
  • 1/4 cup chocolate shavings for garnish
  • 1 cup morello cherries for garnish

Method

Bake the Cake
  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add buttermilk, vegetable oil, eggs, and vanilla extract. Beat with an electric mixer for 2 minutes on medium speed.
  4. Pour the batter evenly into the prepared pans.
  5. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool the cakes in the pans for 10 minutes, then remove from pans and cool completely on a wire rack.
Prepare the Filling
  1. In a bowl, combine the whipped cream, powdered sugar, and vanilla extract. Mix until soft peaks form.
  2. Slice the cooled cakes in half horizontally to create four layers.
  3. Place one layer on a serving plate and drizzle with cherry juice. Spread a layer of whipped cream and top with half of the cherries.
  4. Repeat with the second layer, then place the third layer on top and repeat the process.
  5. Top with the fourth layer and frost the top and sides with the remaining whipped cream.
Decorate the Cake
  1. Garnish the top with chocolate shavings and whole cherries.
  2. Refrigerate for at least 1 hour before serving to allow the flavors to meld.
